Cupcake O’Clock

Ingredients
- 2 1/2 cups (325 grams) all purpose flour
- 250 grams castor sugar
- Pinch of salt
- 4 medium eggs
- 2 teaspoon baking powder
- 1 tablespoon vanilla extract
- 1 cup (240 ml) milk
- 250 grams unsalted butter (room temperature)
For Butter cream cheese frosting
- 250 grams cream cheese
- 150 grams unsalted butter
- Castor sugar
- Vanilla extract/cocoa powder
- Nutella

Steps to make cupcakes
- Preheat oven to 350°F (176°C)
- Mix wet and dry ingredients separately
- Add flour, baking powder, salt & sugar to a large bowl and mix well, set aside
- Now, in another bowl add and mix milk, vanilla extract, unsalted butter and eggs
- Combine the wet ingredients to the dry ingredients and beat well (Add milk if required to maintain consistency)
- Slowly pour the mix into muffin tins lined with paper cases
- Pop the muffin tray into the preheated oven for 15-17 minutes or until a toothpick comes out clean
- Remove the tins from the oven
- Leave the cupcakes to cool in the tins for few minutes
- Now, transfer the cakes to the wire rack and wait for them to cool
Frosting
Add soften 250 grams of cream cheese in a mixing bowl with 150 grams of unsalted butter and mix well. Now, add 1 cup of castor sugar and beat until the texture is smooth and creamy. Next, add in 1 teaspoon of vanilla extract/cocoa powder and food color(optional). The frosting is ready to be piped onto the cupcakes. You can also pipe in Nutella and use it for the icing. Finally, add sprinklers & cherries.
